Pork Chops Provencal

pThey say that variety is the spice of life. I say spice is what brings variety to your plate. The recipe can be made with boneless pork chops but tastes drastically better with chops on the bone./p

liTwo ¾ inch thick bone-in pork chops/li
liSalt and pepper to taste, or your Doctor’s advice/li

p1 clove garlic minced/li
li½ small shallot or scallion, minced/li
li1 tsp. Herbs de Provence/li
li½ tsp. Dijon mustard/li
li1 tbsp. olive oil/li
li2 tbsp. dry red wine/li

h2Preparation/h2

liCombine all ingredients in a bowl./li
liMarinate for 45 minutes, but better if it is overnight./li
liPreheat oven to 425°/li
liIn a fry pan cook pork chops for 3-4 minutes on each side./li
liRemove to baking dish and spoon remaining marinade over the chops./li
liBake for 8-10 minutes until done./li
