Lime Cheesecake Bars

Serves 15

Ingredients

  • 1 1/2 tsp cinnamon
  • 1 1/4 cup almond flour
  • 1 1/2 cup sweetener
  • 6 Tbsp butter, softened
  • 3 8-0z packages cream cheese, softened
  • 1 tsp vanilla extract
  • 3 eggs
  • 1/2 cup lime juice

Preparation

  1. Preheat the oven to 350 F. Combine 1/2 cup of sweetener, almond flour, cinnamon, and butter together. Spread the mixture into a 12-inch baking pan and bake for 10 minutes.
  2. In a large mixing bowl, beat the cream cheese, 1 cup sweetener, and vanilla until it becomes light and fluffy. Add the lime juice and eggs slowly into the mixture, making sure to stir well.
  3. Poor the mixture over the crust. Bake everything for about 30 minutes or until it lightly browns. Let it cool on a wire rack. Cover the cheesecake and let it chill for at least 2 hours. Cut the cheesecake into 15 equal bars.
