Crustless Pumpkin Pie

Serves 8

Ingredients

  • Non-stick cooking spray
  • 3/4 cup unsweetened applesauce
  • 1 tsp ground cinnamon
  • 1 Tbsp pumpkin pie spice
  • 2 large eggs
  • 1 can (15 oz) pumpkin
  • 1 can (12 fl oz) fat-free evaporated milk

Preparation

  1. Preheat oven to 350 F.* Spray baking dish with non-stick cooking spray.
  2. Add all ingredients to a mixing bowl and stir until evenly combined. Pour into prepared dish.
  3. Bake for 45-50 minutes* or until knife inserted in center comes out clean.
  4. Allow to cool for 2 hours before serving. Store in refrigerator.

*Baking temperature and time vary based on pan size and material:

  • 8-inch round cake pan: 350 F; bake for 45 to 50 minutes
  • 9-inch round cake pan: 350 F; bake for 35 to 40 minutes
  • 9-inch round glass pie dish: 325 F; bake for 55 to 60 minutes
  • 10-inch round glass pie dish: 325 F; bake for 45 to 50 minutes
