Gluten-Free Fried Chicken

Serves 6

Ingredients

    5 pounds chicken leg quarters

    1 tsp salt

    1 tsp pepper

    1 tsp garlic powder

    1 tsp paprika

    1 cup coconut flour

    Oil for frying

Preparation

  1. In a bowl, mix together the chicken, salt, pepper, garlic powder and paprika. Refrigerate overnight.
  2. To start frying, add the coconut flour to the prepared chicken and toss to coat. Start heating up the oil, about 2 inches deep, in a heavy-bottomed pan. Heat the oil to 375 degrees.
  3. Toss in the chicken in batches. Cook about 7-9 minutes per side, or until each piece is golden brown.
