Cashew Chicken Lettuce Wraps

Serves 8

Ingredients

  • 2 Tbsp light soy sauce
  • 1 Tbsp honey
  • 1 Tbsp chili garlic sauce
  • 1 Tbsp rice vinegar
  • 1 tsp grated ginger
  • 2 cloves garlic, minced
  • 1 tsp toasted sesame oil
  • 2 Tbsp peanut or olive oil
  • 1 lb boneless, skinless chicken breasts, cut into 1/2-inch cubes
  • 1/2 cup cashews, roughly chopped
  • 8 leaves butter-leaf lettuce
  • 1/2 cup bell pepper, cut in thin slices
  • 1/4 cup cilantro, finely chopped

Preparation

  1. Whisk together soy sauce, honey, chili garlic sauce, rice vinegar, grated ginger, garlic, and sesame oil to create a sauce.
  2. Heat the peanut or olive oil in a skillet. Add the chicken and stir-fry for about 8-10 minutes until fully cooked and no longer pink.
  3. Add the sauce to the skillet, mix together, and allow to simmer for 3-4 minutes, stirring often. Add cashews and combine. Remove from heat and allow to cool slightly.
  4. To assemble the wraps, scoop chicken into the lettuce leaves and top with bell pepper and cilantro. Serve immediately.
