Amaretto Cheesecake

li¼ cup granulated sugar substitute/li

li¼ tsp cinnamon/li
li½ tsp baking powder/li
li4 tbsp butter or margarine/li
li1 large egg/li
li1-2 tbsp iced water (optional)/li

li2 8oz pkgs cream cheese/li
li1 cup ricotta cheese/li
li¾ cup granulated sugar substitute/li
li3 tsp lemon juice/li
li1 tsp grated lemon zest/li
li2 tsp pure vanilla extract/li
li4 tbsp amaretto liquor/li
li¼ tsp almond extract/li
li3 large eggs/li
li1 tbsp flour/li
liSliced almonds to sprinkle over filling/li

liIn the bowl of a food processor, pulse the dry ingredients to pulverize the nuts and combine with the other ingredients./li
liCut butter into 8 pieces to distribute in dry ingredients. Pulse until it forms coarse pea-sized bits./li
liAdd egg and continue to pulse until the dough forms a ball that revolves on the blade (you may need to add 1-2 tbsp of iced water to make this work)./li
liRemove dough, pat out to a disk and wrap in plastic wrap. Refrigerate for 35-45 minutes (or overnight)./li
liRoll out dough on flowered surface to about a 14-inch circle. Using your fingers, fit dough into an 8-9-inch springform pan that's been coated with cooking spray. (If the dough breaks, just piece it together with your fingers.) Refrigerate for 15-20 minutes before filling./li
liIn the food processor, combine granulated sugar substitute, cream cheese and ricotta cheese. Whip on high speed until combined./li
liAdd remaining ingredients and mix until well combined. Taste for balance of flavor. Adjust granulated sugar substitute, lemon or vanilla to suit your taste./li
liPour filling over crust in springform pan./li
liBake at 300F for 45 minutes to 1 hour, until the sides are set but the center is still slightly jiggly./li
liRemove and cool completely. Refrigerate for 4 hours or overnight. Bring to room temperature before serving./li
