Hash Brown Potato Cakes

Serves 8

Ingredients

  • 1 lb russet potatoes, rinsed, peeled, shredded
  • 1/2 medium onion, thinly sliced and quartered
  • 1 tbsp olive oil
  • 2 tsp fresh thyme (1/4 tsp dried), crushed
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper

Preparation

  1. Place potatoes in a large bowl. Add onion, oil, thyme, salt and pepper. Mix to combine.
  2. Coat a large, nonstick skillet with cooking spray and place over medium heat.
  3. Scoop about 1 tbsp of the potato mixture and press into a cake on the skillet. Cook for 5 minutes. Turn the cake over and cook another 3 to 5 minutes. Repeat with the rest of the potato mixture.
