Avocado Vegetable Scramble

Serves 4

Ingredients

  • 2 tsp olive oil
  • 2 cups broccoli, chopped
  • 1 red pepper, chopped
  • 1/2 cup onion, diced
  • 8 eggs, whisked
  • Salt and pepper
  • 1 avocado
  • 1 tomato, diced (or 1 cup pico de gallo)

Preparation

  1. Heat the olive oil in a skillet over medium-high heat.
  2. Add all of the vegetables and cook for 3 to 4 minutes or until slightly tender.
  3. Add the eggs to the skillet and scramble.
  4. Transfer the vegetables and eggs to plates. Top with salt, pepper, avocado and diced tomato or pico de gallo.
