Avocado Toast with Yogurt-Cucumber Spread

Serves 2

Ingredients

  • 1/3 cup low-fat plain yogurt
  • 1/2 Persian cucumber, chopped
  • 2 tsp fresh lemon juice
  • Kosher salt and black pepper
  • 2 slices whole-grain bread, toasted
  • 1 small avocado, sliced
  • 1 Tbsp chopped fresh mint
  • 2 boiled eggs

Preparation

  1. Combine the yogurt, cucumber, lemon juice, salt and pepper in a small bowl to create the Raita (yogurt-cucumber spread).
  2. Spread the Raita onto the toast, then top with avocado and mint. Serve with the boiled eggs on the side.
