Notes from the Chef

I know it is not always possible to have your butcher grind a lean piece of beef for you, but – especially in this recipe – it does make a difference as packaged beef has a high-water content.

Most of the carbohydrates come from the bread you serve this on.

Unlike regular Sloppy Joes, you will need a knife and fork to eat this.

Ingredients

  • 1 medium onion, sliced thinly
  • 2 tbsp olive oil
  • ¾ pound lean ground beef
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp cider vinegar
  • 2 tbsp tomato paste
  • 1 tbsp Dijon mustard
  • ½ cup tomato sauce
  • ¼ cup beef stock
  • ¼ cup dry red wine (or additional beef stock)
  • 4 tsp granulated sugar substitute
  • Salt and pepper to taste
  • 2-3 drops hot sauce (more if desired)
  • ½ cup sautéed mushrooms (optional)
  • 3 whole-wheat sandwich thins or pitas

Preparation

  1. Over medium-high heat, saute onion in olive oil until lightly browned. Add ground beef and cook until well-browned. If there is a lot of liquid, spoon out as much as you can before proceeding.
  2. Add garlic and cook about 30 seconds. Add remaining ingredients and stir to combine. Taste and then make any desired adjustments.
  3. Cook over high heat to thicken. Add mushrooms if desired.
  4. Serve over whole-wheat sandwich thin or pita.
  5. Serving suggestion: Enjoy with a side of Skinny Slaw.
