Herb-Roasted Tomatoes with Parmesan

Serves 4

Ingredients

  • 1/4 cup grated Parmesan
  • 1/2 tsp dried oregano
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp garlic powder
  • 2 tsp extra virgin olive oil
  • 12 1/2-inch-thick tomato slices, from 6 medium tomatoes

Preparation

  1. Preheat the oven to 425 F and line a rimmed baking sheet with parchment paper.
  2. In a small bowl, combine the Parmesan, oregano, salt, pepper and garlic powder. Add and mix in the olive oil.
  3. Arrange the tomato slices onto the baking sheet. Scoop a heaping 1/2 tsp of the Parmesan mixture onto each slice, dividing evenly. Using your fingertips, press down on the Parmesan mixture to create an even layer.
  4. Bake for 20 minutes or until the tomatoes are soft and the topping begins to brown.
