Grilled Vegetable Medley

Serves 6

Ingredients

  • 1/2 pound medium fresh mushrooms
  • 1/2 pound cherry tomatoes
  • 1 cup sliced zucchini
  • 1 tbsp olive oil
  • 1 tbsp butter, melted
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning
  • 1/8 tsp garlic powder

Preparation

  1. Chop the mushrooms and cherry tomatoes. Put the first three ingredients together.
  2. Put the vegetables into a piece of double-thick foil. Combine the melted butter, oil, onion powder, Italian seasoning, and garlic powder in a small bowl. Whisk together and then drizzle over the vegetables.
  3. Seal the foil and put on grill at medium-heat for approximately 20-25 minutes or until the vegetables are tender.
