Fresh Tomato-Vegetable Soup Recipe

li6 medium tomatoes/li
li3/4 cup red onions, chopped/li
li3/4 cup celery, diced, include tops/li
li4 tsp olive oil/li
li3 cloves garlic, minced/li
li3/4 cup zucchini, diced/li
li3/4 cup corn kernels/li
li4 1/2 cup vegetable broth/li
li3/4 tsp salt/li
li5 tsp basil, chopped/li
li1/2 cup small pasta shells/li

h3Preparation/h3
ol
liPlunge the tomatoes into boiling water, then into iced water to remove their skins./li
liChop the tomatoes, set aside./li
liIn a stockpot, saute the onions and celery in the oil over medium heat until tender, 5 minutes./li
liStir in the garlic, zucchini, corn and saute for another 2 minutes./li
liAdd the broth and bring to a boil. Add the tomatoes, salt and basil. Reduce the heat, cover and simmer for 15 minutes, stirring occasionally./li
liAdd the pasta, cover and simmer for 30 minutes /li
