Diabetic Cupcakes Recipe

Yields approx. 30 cupcakes

Ingredients

  • 1 1/2 cups white flour
  • 1 1/2 cups whole wheat flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 4 tsp Sweet n Low
  • 1 tsp salt
  • 1 can crushed pineapple in its own juice, undrained
  • 1 1/2 tsp vanilla
  • 3 eggs
  • 2 cup diced bananas (about 2 lg. ones)
  • 1 1/2 cup cooking oil

Preparation

  1. Preheat oven to 350 degrees.
  2. Line cupcake pans with paper liners.
  3. Sift together dry ingredients in mixing bowl.
  4. Combine wet ingredients and add them to dry ingredients
  5. Mix to combine thoroughly but do not overbeat.
  6. Pour batter into lined cupcake pans.
  7. Bake at 350 degrees for 40 minutes or until toothpick inserted into center comes out clean.
