French Toast Cookies

Serves 18

Ingredients

  • 1/4 cup (half a stick) butter, softened
  • 1/4 cup granulated sugar
  • 1/8 tsp baking soda
  • 1/8 tsp cream of tartar
  • 1 egg or egg white
  • 1/4 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1 tbsp granulated sugar (for topping)
  • 1/2 tsp ground cinnamon (for topping)

Preparation

  1. Preheat oven to 375 degrees.
  2. In a mixing bowl beat butter with an electric mixer for 30 seconds. When smooth, add the 1/4 cup sugar, baking soda, and cream of tartar. Beat well until combined. Add egg and vanilla, continuing to beat dough. Add in as much of the flour as you can with the mixer without it getting messy. Manually stir in any remaining flour. Cover dough and chill in the refrigerator for 1 hour.
  3. In a small bowl combine the 1 tbsp sugar and the cinnamon for topping. Shape cookie dough into 1-inch balls. Roll balls in the sugar-cinnamon mixture to coat on all sides. Place dough balls 2 inches apart on a nonstick cookie sheet.
  4. Bake cookies at 375 degrees oven for 10 to 11 minutes or until edges are golden brown. Transfer cookies to a wire rack to cool.
