Salmon Patties with Lemon Sauce

li2 egg whites/li
li1/2 tsp ground black pepper/li
li1/4 cup old-fashioned oats/li
li2 tsp Dijon mustard/li
li1 Tbsp dried parsley/li
listrongLemon Sauce/strong/li
li1 lemon, juiced/li
li2 Tbsp trans-fat-free margarine/li
li1 tsp chopped fresh parsley/li

liIn a bowl, mix together all patty ingredients. Divide into 4 equal servings, then shape into 1/4-inch-thick patties./li
liIn a large non-stick skillet, cook patties over medium heat. Cook for about 5 minutes or until golden brown./li
liPrepare the sauce by combining the sauce ingredients in a saucepan. Simmer for 5 minutes./li
liServe sauce over salmon patty (2 tsp per patty)./li
