SAUCE1.00 tb Cornstarch1.00 tb Sherry or fat-free chicken2.00 tb Soy sauce0.50 c Fat-free chicken broth0.13 ts Ground ginger0.13 ts Garlic powderCHICKEN2.00 md Size chicken breast halves1.00 tb Vegetable oil0.50 c Onions2.00 c (6 oz) frozen boccoli cuts0.50 c Fat-free chicken broth

Preparation:

2 medium-size chicken breast halves without skin orvisible fat 1 tbsp. vegetable oil 1/2 cup slicedonions 2 cups (6 oz.) frozen broccoli cuts 1/2 cupfat-free chicken broth Combine first 6 ingredients andmix until smooth to form a marinade. Bone chickenbreasts. Freeze bones for later use in broth and cutchicken into bite-sized pieces. Place in marinade andrefrigerate for 1-4 hours. Drain well, reservingmarinade for later use.Fry chicken in vegetable oil in heavy frying panuntil clear and firm. Remove chicken from frying panwith a slotted spoon, leaving as much of the fat aspossible still in the frying pan. Add onions andbroccoli to the fat in the frying pan. Slice anylarger pieces to about 1/2-inch thickness. Cook andstir about 1 minute or until broccoli is thawed.Add broth to vegetables, mix lightly, cover, andsimmer for 5 minutes or until the broccoli iscrisp-tender. Add marinade and cook and stir overmoderate heat until sauce is thickened and clear. Addchicken and reheat to serving temperature. Serve 2/3cup per serving over rice.
