Chewy Apple Moons Recipe


  • 3/4 cup apple juice concentrate with no sugar added
  • 1/2 cup dried apples
  • 1/2 cup egg substitute (equivalent to 2 whole eggs)
  • 1/4 cup reduced fat margarine, melted & cooled
  • 1 tsp vanilla
  • 1 1/4 cup whole wheat flour (or 1/2 whole wheat, 1/2 white)
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/8 tsp ground nutmeg


  1. Chop fruit.
  2. Combine apple juice concentrate and apples; let stand 10 minutes.
  3. Preheat oven to 350.
  4. Beat eggs in medium bowl.
  5. Blend in concentrate mixture, butter, and vanilla.
  6. Add remaining ingredients and mix well.
  7. Drop tablespoons of dough 2" apart on greased cookie sheets.
  8. Bake 10-12 minutes, until firm and golden brown.
  9. Cool on wire racks. Store in tightly covered container.
