1 lb Black beans1 tsp Oregano1 large Onion, chopped3 Bay leaves1 cl Garlic1/2 cup Vinegar1 Green pepper, chopped2 cup Cooked brown rice2 tsp Olive oil1 Ham hock, trim fat

Preparation:

Wash the beans and soak overnight in 2 quarts of coldwater. Saute the onion ( and it's just as good if youleave the onion raw), garlic and pepper in the oil.Combine all the ingredients except the vinegar andrice, and cook over low heat until the beans aretender.
