Barbecued Pork Sandwiches Recipe

Ingredients

  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp ground black pepper
  • 1 tsp celery salt
  • 3 lb pork meat, boneless shoulder roast
  • 2 onions
  • 1/2 cup water
  • 2 cups broccoli slaw mix
  • 1 cup any salad dressing, low-fat mayonnaise-based
  • 16 hamburger buns of your choice, whole-wheat recommended

Preparation

  1. Stir together in a bowl the garlic powder, onion powder, black pepper, and celery salt. Mix until evenly distributed.
  2. Trim fat from meat. Sprinkle salt and pepper mixture evenly over meat and rub in with your fingers.
  3. Make sure meat is cut small enough to fit in slow cooker. Place onion in the bottom of a 3 1/2- to 4-quart slow cooker.
  4. Add meat on top of onions. Pour the water over everything.Cover and let cook on low-heat setting for 8 to 10 hours or overnight.
  5. Once thoroughly cooked, remove meat and onions from cooker and place on a cutting board. Discard any liquid left behind. Using forks, pull meat apart until it shreds.
  6. Keep meat in slow cooker until served.
  7. To serve, in a small bowl, combine shredded broccoli and 1/4 cup of the mayonnaise dressing. Spread bottoms of the hamburger buns with the remaining mayonnaise dressing. Place pork on bottoms of buns. Top with shredded broccoli mixture; replace tops of buns.
