Black Bean Tostadas with Veggies

Serves 4

Ingredients

  • 2 cups sliced mushrooms
  • 2 small zucchini, sliced
  • 1 large red bell pepper, chopped
  • 4 black bean tostadas

Preparation

  1. Coat a medium-sized skillet with cooking spray and place over medium-high heat.
  2. Place mushrooms, bell pepper and zucchini in the pan and sauté for 3-5 minutes or until tender.
  3. Spoon 3/4 cup of the vegetable mixture over black beans for each tostada.
  4. Garnish with lettuce, salsa and cheese.
