Black Bean Tostadas with Veggies
Serves 4
Ingredients
- 2 cups sliced mushrooms
- 2 small zucchini, sliced
- 1 large red bell pepper, chopped
- 4 black bean tostadas
Preparation
- Coat a medium-sized skillet with cooking spray and place over medium-high heat.
- Place mushrooms, bell pepper and zucchini in the pan and sauté for 3-5 minutes or until tender.
- Spoon 3/4 cup of the vegetable mixture over black beans for each tostada.
- Garnish with lettuce, salsa and cheese.
