Black Bean Quesadilla

Serves 8

Ingredients

  • 1/3 Onion, diced
  • 1 can Black beans, rinsed and drained (about 15.5 oz)
  • 1/4 tsp Cumin
  • 1/2 cup Salsa
  • 8 Whole-wheat, low-carb tortillas (10g carb, 7g fiber)
  • 1 1/2 cups Shredded reduced-fat cheddar cheese

Preparation

  1. In a large greased skillet, sauté onions until clear.
  2. Add cumin, salsa, and beans and sauté for about 3 more minutes.
  3. Remove mixture from pan.
  4. Re-grease pan with cooking spray and add tortilla to pan.
  5. Place 3 tbsp cheese and 3 tbsp bean inside of tortilla. Fold tortilla in half and cook until golden brown on each side.
  6. Repeat for each tortilla.
  7. Serve warm with additional salsa, if desired.
