Black Bean Quesadilla
Serves 8
Ingredients
- 1/3 Onion, diced
- 1 can Black beans, rinsed and drained (about 15.5 oz)
- 1/4 tsp Cumin
- 1/2 cup Salsa
- 8 Whole-wheat, low-carb tortillas (10g carb, 7g fiber)
- 1 1/2 cups Shredded reduced-fat cheddar cheese
Preparation
- In a large greased skillet, sauté onions until clear.
- Add cumin, salsa, and beans and sauté for about 3 more minutes.
- Remove mixture from pan.
- Re-grease pan with cooking spray and add tortilla to pan.
- Place 3 tbsp cheese and 3 tbsp bean inside of tortilla. Fold tortilla in half and cook until golden brown on each side.
- Repeat for each tortilla.
- Serve warm with additional salsa, if desired.
