Eggplant Pizzettes
Serves 2
Ingredients
- 4 slices fresh eggplant, peeled
- Salt and pepper to taste
- 4 Tbsp spaghetti sauce
- 2 ounces part-skim mozzarella cheese
- 2 jumbo black olives, sliced
Preparation
- Preheat oven to 425 F.
- Season eggplant slices with salt and pepper. Arrange on a baking sheet and bake until browned, 6 to 8 minutes. Turn once during baking.
- Spread 1 Tbsp spaghetti sauce on each eggplant slice. Top off with shredded cheese and black olives.
- Bake until cheese melts, 3 to 5 minutes.
- Serve hot.
