Eggplant Pizzettes

Serves 2

Ingredients

  • 4 slices fresh eggplant, peeled
  • Salt and pepper to taste
  • 4 Tbsp spaghetti sauce
  • 2 ounces part-skim mozzarella cheese
  • 2 jumbo black olives, sliced

Preparation

  1. Preheat oven to 425 F.
  2. Season eggplant slices with salt and pepper. Arrange on a baking sheet and bake until browned, 6 to 8 minutes. Turn once during baking.
  3. Spread 1 Tbsp spaghetti sauce on each eggplant slice. Top off with shredded cheese and black olives.
  4. Bake until cheese melts, 3 to 5 minutes.
  5. Serve hot.
