Creamy Broccoli Soup

li2 large crowns broccoli/li
li1 tbsp butter/li
li2 medium to large sweet onions, sliced/li
li2-3 tbsp olive oil/li
liSalt and pepper to taste/li
li2-4 cloves garlic, minced/li
li2 tbsp flour/li
li1 ½ quarts low-sodium chicken broth/li
li1 lemon/li
li2 tsp fresh basil (or 1 tsp dried)/li
li1 big stalk celery, roughly chopped/li
li1 carrot, peeled and roughly sliced/li
li½ cup Swiss or cheddar cheese, grated/li
li3-4 heaping tbsp low-fat sour cream/li
li½ cup Parmesan cheese, grated/li

liPreheat oven to 400 F./li
liMelt butter and combine with salt and pepper./li
liCut broccoli into florets. Toss with butter mixture and turn out onto baking sheet. Bake for 10 minutes. Remove from oven and let cool./li
liIn a large pot, sauté onion in olive oil until soft but not brown. Add salt and pepper about one minute into the process./li
liAdd garlic and flour. Cook for about one minute./li
liSlowly add chicken broth, stirring to avoid lumps./li
liAdd juice and zest of lemon. Add basil, celery, carrot and about half of the roasted broccoli. Simmer for 10-15 minutes on low heat./li
liRemove from heat. Add Swiss or cheddar cheese. Let cool./li
liAdd remaining broccoli, sour cream and Parmesan cheese. Using an immersion blender, whip soup until smooth. (Or smooth in batches in a food processor.)/li
liServe either hot or cold./li
