Parmesan Crusted Salmon

Serves 2

Ingredients

  • 2 ounces fresh sour dough bread
  • 1 ounce Parmigiano-Reggiano, grated
  • 1 clove garlic, minced
  • 1 Tbsp fresh basil, chiffonade
  • 1 tsp extra virgin olive oil
  • 1/2 Tbsp balsamic vinegar
  • 2 4-ounce salmon fillets, no more than 1/2 inch thick
  • Olive oil spray

Preparation

  1. In a food processor, process the sour dough bread until they become fine crumbs. Add the parmesan, garlic, basil, olive oil, and vinegar and let it process until the mixture is well combined. It will become a moist breadcrumb mixture.
  2. Preheat the oven to 450 F. Place a nonstick skillet in the lowest possible rack in the oven and remove the middle rack. Leave the pan in the oven for at least ten minutes.
  3. Place the salmon fillets on a cutting board with the skin side down. Pat the breadcrumb mixture onto the top of each fillet.
  4. Remove the skillet from the oven and spray it lightly with oil. Place the salmon fillets onto the pan, skin side down and place it in the oven.
  5. For a rare finish, cook it for 6 minutes. Switch on the broiler and let it broil until the crust is golden brown for another 3 to 5 minutes.
