Low-Carb, Gluten-Free Chocolate Chip Cookies
Yields 30 cookies
Ingredients
- 2 cups almond flour
- 1 bag 60% dark chocolate chips
- 2 Tbsp flax seed
- 1 cup non-hydrogenated margarine
- 1/2 cup unsweetened applesauce
- 1/2 cup unsweetened peach puree
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
Preparation
- Preheat oven to 350 F.
- Combine almond flour, chocolate chips and flax seed in a bowl.
- In a separate bowl, combine remaining ingredients.
- Add one bowl of ingredients to the other and mix well.
- Scoop dough onto ungreased baking sheet, creating 30 cookies total.
- Bake each batch for 8-10 minutes.
