Green Bean Casserole

Serves 10

Ingredients

  • 1 1/2 pounds fresh green beans
  • 2 tbsp butter
  • 3 tbsp all-purpose flour
  • 1/4 tsp ground white pepper
  • 1 tbsp dry ranch salad dressing mix
  • 1 1/2 cups fat-free milk
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 1/2 cups sliced mushrooms
  • 1 cup soft whole-wheat bread crumbs

Preparation

  1. Preheat oven to 375 F.
  2. Boil green beans for 10 to 15 minutes. Drain.
  3. Melt butter in a saucepan. Mix in flour, white pepper and dressing mix, then add milk. Cook over medium heat until thick.
  4. Coat a pan with nonstick cooking spray. Over medium heat, cook onion and garlic for 2 minutes. Remove half of the contents and set aside.
  5. Add mushrooms to the pan and cook another 5 minutes.
  6. In a 1-1/2 quart casserole dish, combine green beans, white sauce and mushroom mixture.
  7. Stir together reserved onion mixture with bread crumbs, then sprinkle over the casserole. Bake uncovered for 25 to 30 minutes.
