Ingredients:


TUNA CAKES

1.00 cn Tuna
0.75 c Seasoned Bread Crumbs
0.25 c Green onions, minced
1.00 Egg
0.50 c Milk, low fat
0.50 ts Lemon peel, grated
2.00 tb Oleo
2.00 tb Pimento

LEMON DILL SAUCE

0.25 c Chicken broth
0.25 ts Dill weed
1.00 tb Lemon juice

Preparation:

In a large bowl toss together tuna, crumbs, onions and
pimentos. In a small bowl beat together the egg and
milk; stir in lemon peel. Stir into tuna mixture; toss
until moistened. With lightly floured hands, shape
mixture into 8 4" patties. In a large non-stick
skillet melt oleo. Fry patties, a few at a time, until
golden brown on both sides, about 3 minutes per side.
Place on an ovenproof platter in a 300^F oven until
ready to serve. For sauce, in a small saucepan heat
broth, lemon juice and dill weed.
