Diabetic Breakfast Recipes
Whole-Wheat Granola Recipe
Ingredients:
1 cup Regular oats, uncooked
3/4 cup Whole-wheat flour
1/2 cup Wheat germ
3/4 tsp Cinnamon
1/4 tsp Salt (optional)
1/4 cup Vegetable oil
1/4 cup Honey or substitute
2 tbsp Orange juice
1/4 cup Flaked coconut
2 tbsp Sliced almonds
Preparation:
This is 1/4 original recipe.
Mix first 5 ingredients in electric mixer. Combine oil, honey, and
juice and pour over mixture. Mix until completely blended.
Spread evenly in a shallow pan and bake in 250 F oven for 45 minutes.
Stir in coconut and almonds and bake 30 minutes more. Cool and stir
in raisins.

*NOTE: To cut calories and fat, reduce the coconut and oil by a third.
