Banana Nut Mini-Muffins

Ingredients

  • 1 cup soy flour
  • 1 cup whole wheat flour
  • Dash of salt
  • 1 tbsp baking soda
  • 1 tsp vanilla extract
  • 1 cup chopped walnuts
  • 4 medium bananas, very ripe
  • 2 eggs
  • 1 cup sugar or sweetener
  • 1/2 cup melted butter or margarine

Preparation

  1. Preheat oven to 350 degrees.
  2. Sift together flour, soda, and salt in a small bowl and set aside.
  3. Mix sugar and butter together until creamy. Add eggs and vanilla, mix. Smash ripe bananas and mix in by hand. Fold in dry ingredients. Add chopped walnuts and mix well.
  4. Spoon into mini muffin pan. Bake for about 15 minutes.
