Vera's Buttermilk Cookies Recipe

li1/2 cup Margarine, (1 stick)/li
li2/3 cup Sugar or Dry sugar substitute equal to 1/4 c.
/lili1 Egg, (large)/li
li1 tsp Vanilla/li
li2 cup All-purpose flour/li
li2 tbsp Dry Buttermilk/li
li1 tsp Baking soda/li
li1/4 tsp Salt/li
li1/3 cup Water at room temperature/li

liCream margarine, sugar, and dry sugar substitute together at medium speed untill light and fluffy./li
liAdd egg and vanilla and mix at medium speed for 30 seconds, scraping down the bowl before and after adding the egg and vanilla./li
liStir flour, dry buttermilk, baking soda and salt mixture, along with water into creamy mixture, and mix at medium speed to blend well./li
liDrop dough by 1 1/2 tablespoonfuls onto cookie sheeet that have been sprayed with pan spray or lined with aluminum foil. Press cookies down on the bottom. Remove and cool on wire rack/li
