Tuna Loaf Recipe
Ingredients:
1.00 c Potato, peeled and grated
1.00 c Carrots, grated
1.00 cn Tuna
0.50 c Onion, chopped
0.33 c Parsley
1.00 tb Pimento, drained and choppe
1.00 cl Garlic, minced
2.00 Eggs
1.00 ts Thyme, dried, crushed
0.25 ts Sage
0.50 ts Salt
0.25 ts Pepper
2.00 tb Cornstarch
0.67 c Mozzarella,low fat, shredde
Preparation:
Preheat oven to 350^. Spray 8x4x2 1/2 pan with non
stick spray. In a saucepan steam potatoes and carrots
over simmering water for 5 min or until tender. In a
large bowl mix together tuna, potato, carrots, onions,
parsley, pimento, and garlic until well combined. In
a small bowl stir together egg and seasonings; stri in
cornstarch. Mix into tuna mixture. Transfer mixture to
loaf pan. Cover with foil. Bake 20 mins. Uncover; bake
for 10 mins more or until heated through. Sprinkle
cheese over top and bake 1-2 minutes until cheese
melts. Let stand 5 mins; slice cal: 293 cal
