Tuna Italiano Insalata Recipe
Ingredients:
DRESSING
3 tbsp red wine vinegar
1 large garlic, minced
1 tsp dried basil
1/2 tsp salt
1/4 tsp sugar
ground pepper, freshly ground
4 tsp olive oil
SALAD
2 cup bow tie pasta, or spiral, cooked
1/2 cup tuna in water, drained
2 oz Monterey jack cheese, diced 1/4" *
1 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup celery, thinly sliced
3/4 cup broccoli flowerets, steamed
1/2 cup artichoke hearts
1/4 cup chopped parsley
Belgian endive
* low fat, or low fat cheddar cheese
DRESSING
In small container with tightly fitting lid, combine dressing
ingredients. Cover tightly and shake thoroughly to mix.
SALAD
To make salad: In large bowl combine salad ingredients, except
endive. Pour dressing over all and toss to mix. Chill at least 1 hour.
TO SERVE
Arrange salad in serving bowl lined with endive spears.

NOTE
I think it makes a huge difference to a finished dish if you peel
celery and broccoli stalks during preparation.
