Tangy Fish Kabobs Recipe
Ingredients:
8 oz fresh fish filets, if using frozen - thaw and drain
1 tbsp extra-virgin olive oil
1 tbsp lemon juice
2 tsp fresh basil
2 tsp fresh oregano
2 tsp fresh thyme
1 tsp dried rosemary
6 mushrooms
1 small zucchini, cut in 1/2-inch - slices
1 small onion, cut into small - wedges
1 medium red or green bell pepper, cut into 1-inch - chunks
4 cherry tomatoes
1 small yellow squash, cut in 1/2-inch - slices
3 tsp lite soy sauce
Cut filets into 1&1/2-inch pieces and place in a small bowl. Whisk
together the oil, lemon juice, basil, oregano, thyme, and rosemary and pour
over the fish, tossing gently to coat. Cover tightly and marinate in the
refrigerator for 1 hour.
Preheat the oven to 400 degrees. Remove the fish from the marinade and
discard the marinade. Combine all the vegetables and steam lightly for
about 3 minutes.
Assemble the kabobs on 4 skewers, alternating fish and vegetable pieces as
desired. Spray the rack on a broiler pan with cooking spray and place the
skewers on the rack.
Bake for 6 minutes. Turn the kabobs and bake for 6 to 7 minutes or until
the fish flakes easily with a fork.
