Sweet & Sour Rice Salad Recipe
Ingredients:
3 cup cooked rice
1 cup corn, frozen or fresh
1 15 oz. can black beans, drained, rinsed
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1 red onion, chopped
1 cup pineapple tidbits
2 tbsp Equal? sweetener
2 tbsp canola oil
2/3 cup vinegar
salt, to taste
In large mixing bowl, combine rice, corn, beans, peppers, onion, and
pineapple. In another bowl, whisk together sweetener, oil, and vinegar.
Pour
over rice mixture. Add salt to taste. Cover and chill several hours at
least
before serving.
