Ingredients:

12 oz cooked sweet potatoes, peeled and sliced length
2 small sweet apples, peeled, halved and cut in
1/4 cup frozen orange juice, concentrate, thawed
1/4 cup water
6 tsp sugar
1/8 tsp ground ginger
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
1 tbsp margarine, +
1 tsp margarine

Preparation:

Preheat oven to 350. Arrange alternate slices of sweet potato and apple in
a baking dish that has been sprayed with a nonstick cooking spray. Combine
orange juice, water, sugar and spices. Pour mixture evenly over potatoes
and apples. Dot with margarine, and bake uncovered 1 hour.

Per serving: 2g protein, 4g fat, 36g carb., 86mg sodium, 0mg chol., 207
calories.
