Ingredients:

2 small cucumbers, grated
1 .3 oz. box lemon jello, sugar-free
1/2 cup very hot water
1 small onion, finely chopped
1/2 cup mayonnaise, fat-free
1 tbsp vinegar
1 cup cottage cheese, low-fat

Preparation:

Drain cucumbers well. In larger serving bowl, dissolve lemon jello in hot
water. Add onion, mayonnaise, vinegar, cottage cheese, and cucumbers.
Mix
well. Chill several hours before serving.
