Stuffed Mushrooms No.2 Recipe

Stuffed Mushrooms No.2 Recipe from the diabetic recipe collection at InformationAboutDiabetes.com

Ingredients:

12 large mushrooms
1 tsp olive oil
1/4 cup finely chopped onion
2 cloves garlic, crushed
1/4 cup italian seasoned bread crumbs
1 tbsp grated parmesan cheese
1/2 tsp dried basil
1/8 tsp pepper
1/4 cup water

Preparation:

Preheat oven to 375?.

Remove stems from mushrooms by gently twisting stem out. Finely chop the
stems. Lightly oil a large baking sheet.

Heat oil in nonstick pan over medium heat. Add chopped stems, onion, and
garlic. Cook, stirring frequently, 5 minutes, until onion is tender.
Remove from heat and add remaining ingredients. Mix well.

Fill mushroom caps with stuffing. Place on a the baking sheet. Bake 15
minutes. Serve hot.
