Ingredients:

quinoa -
1 cup quinoa
2 cup water
asparagus -
1 lb fresh asparagus - wash, slice diago - into 2 inch pieces
2 tsp olive oil
salt and pepper, to taste

Preparation:

Quinoa - Quinoa is a grain that is a good source of protein, calcium, and
iron. It can be found in most health food stores. Rinse quinoa in cool
water. Bring 2 cups water to a boil. Add quinoa and simmer for 15 min.

Heat oil in a medium frying pan. Add asparagus and salt and pepper. Stir
constantly until asparagus is tender but still somewhat crisp
(approximately 5 minutes)

Combine quinoa and asparagus or serve separately if desired.

Makes 4 servings:

Per serving: 200 calories 35 g carbohydrate 5.5 g fiber 24 g protein 4 g
fat
