Ingredients:

3.00 c Cooked mashed squash *
3.00 tb Honey, brown sugar replace-
3.00 tb Whole wheat flour
0.38 ts Salt (optional)
0.25 ts Nutmeg
0.25 ts Cinnamon
0.25 ts Ginger
3.00 Eggs, separated

Preparation:

* Use acorn, butternut, banana or any winter
squash.
Combine squash, honey, flour, salt and spices. Mix
well. Stir in egg yolks. Beat egg whites till stiff
but not dry. Fold into squash mixture. Pour into 1 1/2
quart casserole dish which has been sprayed with a
nonstick vegetable coating. Bake at 350 ~F. for 45
minutes or until crusty.
