Ingredients:

1.00 lb Spinach, fresh
1.00 c Apple, chopped
0.50 c Celery, chopped
0.25 c Cider vinegar
0.25 c Oil
1.00 ts Sugar
1.00 ts Caraway seed
0.25 ts White pepper, ground

Preparation:

Remove the stems from the spinach; Wash the leaves
throughly and pat dry. Tear into bite size pieces.
Combine the spinach, apple, and celery in a large
bowl. Combine the vinegar and remaining ingredients in
a small saucepan and bring to a boil. Pour over the
spinach mixture and toss well. Serve immediately
