Ingredients:

4.00 ts Olive oil
3.00 md Ripe tomatoes (about 1 lb.)
0.50 ts Dried oregano, crumbled
0.50 c Dry white wine or chicken
3.00 c Water fillets, cut into bit
2.00 tb Minced parsley
2.00 cl Garlic, minced peeled, core
tomatoes, ?
1.00 ts Dried basil, crumbled
1.00 pn Cayenne ppper broth
0.50 lb Cod or other white fish siz

Preparation:

In a large heavy saucepan, heat the olive oil over
moderate heat; add the garlic, tomatoes, basil,
oregano, cayenne pepper, and wine, and cook,
uncovered, for 10 minutes.
Add the water, cover, bring to a simmer - about 3
minutes. Mix in the cod and cook, uncovered, 5 minutes
longer. Ladle into bowls and sprinkle with the
parsley. Serves 4.
