Ingredients:

12 oz black beans, (try other beans as well)
1 spring water for soaking and cookin, g
2 cl fresh garlic, minced, =or=-
1 tsp bottled garlic
2 tsp fresh parsley, minced
1 tsp to 2 ts curry powder
1/2 tsp cayenne pepper, or to taste

Preparation:

Soak black beans in water overnight. Drain beans. Place in a large
skillet along with fresh spring water. Bring to a boil. Reduce heat, and
add garlic and parsley. cover and simmer 1-1/2 hours. Check the water
level occasionally, adding more as needed. When beans are tender, uncover
and add spices. Cook uncovered until water has evaporated and the beans
reach the desired consistency. Serve hot. This is delicious mixed with
brown rice. This recipes also freezes well. Serves 6.
