Ingredients:

SALAD
2.00 Chicken breasts - grilled
3.00 tb Sesame seeds
1.00 Head leaf or bibb lettuce,
1.00 c Water chestnuts - sliced
1.00 c Snow peas (pea pods) sliced
6.00 Green onions, sliced
Teriyaki marinade - optional
DRESSING
0.67 c Oraange juice
1.00 tb Oil
2.00 tb Rice vinegar
3.00 tb Water
0.25 ts Fresh ginger
0.25 ts Fresh garlic - crushed

Preparation:

FOR SALAD; Marinate chicken breasts in Teriyaki
marinade and grill until done. Slice them and
sprinkle with sesame seeds. Wrap in foil to keep warm
while preparing salad. In large bowl, combine
lettuce, water chestnuts, snow peas and onions. Toss
with dressing. Divide salad onto 4 plates and top each
with 1/2 of each brest. Yield: 4 servings - 1 serving
= to 1/4 salad. FOR DRESSING: Combine all ingredients
and mix well. NUTRITIONAL INFO; 180 calories, 9 grams
fat, 11 grams carbohydrates, 36 mg cholesterol, 17
grams protein, 37 mg sodium. Exchanges: 2 low-fat meat
exchanges, 1 vegetable exchange and 1 fat exchange.
