4.00 Shallots, minced
1.00 tb Fresh thyme leaves or 1
Ts crushed dried
1.00 Bay leaf
1.00 c Dry white wine
1.00 c Beef stock
1.00 c Chicken stock
2.00 ts Unsalted butter
Freshly ground pepper to
Taste

Preparation:

In a heavy saucepan, cook shallots, thyme, bay leaf,
pepper and white wine over medium-high heat for 5
minutes or until mixture is reduced to a glaze. Add
stocks and cook over high heat until mixture is
reduced by half. Remove from heat. Whisk in butter.
Discard bay leaf.
