0.13 ts Black pepper, freshly groun

Preparation: Arrange the salmon on a plate. In a skillet, heat 1
tablespoon of olive oil. WHen hot saute the spinach
over medium heat for 1 1/2 minutes. Mix in the salt
and pepper and divide the spinach among for plates.
Heat the remaining tablespoon of olive oil in the
skillet. Saute the onion and tomatoes over medium heat
until the onion is tender, about 5 minutes. Push to
one side and add the salmon. SAute over medium heat
until cooked through, about 5-6 minutes. Arrange teh
salmon on the spinach and top with tomato and onions.
