Quick Homemade Raisin Bread Recipe
Ingredients:
Nonstick Vegetable Spread
0.75 c Dark seedless raisins
1.00 c Boiling water
1.50 c All-purpose flour
1.00 ts Baking soda
7.00 pk Sugar substitute
0.50 ts Cinnamon
0.25 ts Salt
1.00 ea Egg
1.00 ts Vanilla extract
0.25 c Vegetable oil or melted mar

1987. 1. Preheat oven to 350~F. Spray a 9- by 5-inch
loaf pan with nonstick vegetable spray. Dust lightly
with flour. 2. Combine raisins and water; set aside
for 30 minutes. 3. Combine flour, baking soda, sugar
substitute, cinnamon, and salt in large mixing bowl.
Add raisins with liquid, egg, vanilla, and oil. Mix
just until dry ingredients are moistened. 4. Pour into
prpepared pan. Bake for 40 to 45 minutes or until
golden brown and firm to the touch. Let stand for 5
minutes; remove to cooling rack. Serve warm or slice
and toast. YIELD: 1 loaf - 18 slices SERVING SIZE:
1/2-inch slice EXCHANGES per serving: 1 starch/bread
and 1/2 fat NUTRIENT CONTENT per serving: CAL 93, FAT

mg, Chol 15 mg.
