Ingredients:

1.00 lg Pork chop, fat trimmed
2.00 tb Raw rice
1.00 sm Onion, sliced
0.50 sm Green pepper, sliced
0.50 c Tomatoes, chopped
Salt & pepper to taste
Or salt-free herb blend
0.25 c Hot water

Preparation:

Place the pork chop in small casserole dish. Top
with rice and vegetables and seasonings. Pour hot
water over the mixture.
Bake at 350 degrees for 1 hour. Makes one serving.

PERSONAL NOTE from Ursula Taylor. Folks I make
this on a regular basis and since my husband is not a
rice eater - I leave the rice and water out - then
serve the sauce over plain noodles. If the sauce seems
a little thin - then about 10 minutes before it's done
~ remove from the oven and add a little cornstarch
that has been mixed with water to the sauce, stir and
put back in oven - it thickens nicely. This recipe
doubles nicely.
