Penny's Beans Recipe

Penny's Beans Recipe from the diabetic recipe collection at InformationAboutDiabetes.com

Ingredients:

1 lb cooked beans (any kind)
1/2 onion, diced, sauteed
2 cl garlic, crushed
1 tbsp canola oil
1 cup mushrooms, undrained
2 cup chicken broth (spice island chicken, stock base)
3 tbsp lemon juice
1 lemon pepper to taste
1 cup cooked brown rice

Preparation:

Cook beans. Saute onions and garlic in oil until onions are clear. Add
mushrooms, chicken broth, lemon juice, lemon pepper, and rice to beans,
cook over low heat for about 1/2 hour.

This is complete nutrition when eaten with some green salad. Nearly no fat,
and none animal. You can eat as much as your heart desires and gain not an
ounce. I soak my beans over night in soda water to eliminate gas.

For variety, use beef stock, and other veggies sauteed, and other
spices...the variety is infinite! The taste is DELICIOUS!!!!
