2.00 c Tomatoes, cut into 1/8's
1.00 c Onions, coarsely chopped
0.50 c Green Pepper, coarsely chop
Sprig Parsley, chopped
1.00 tb Mint, chopped
1.00 ts Garlic Powder
Salt and Pepper, to taste
Veg. Cooking Spray

Preparation:

Soak okra in vinegar for 5 min. Drain. Pat okra
slightly dry. Combine all ingred. (except vinegar) in
baking dish coated w/ vegetable cooking spray. Cover.
Bake at 350 for 45 min. Yield: 5 servings Exchange: 1
